Hi guys, I’m Kate and I run the blog Drizzle Me Skinny. I am a lifetime Weight Watchers member, first earning my status back in 1998, then after having my one and only child in 2003, I struggled for 11 years with my weight. I would bounce back and forth so many times and continually self-sabotage. I lost count of how many Monday “start-overs” I had.

In January 2014, I finally recommitted with determination and motivation. I owe social media a big thank you for this, as starting my Instagram account and tracking my journey was what held me accountable. In October 2014, I hit my lifetime goal once again, and I have since maintained it.

I have had the pleasure of hosting several DietBet games, and I love interacting with all the players. To see the support and encouragement that goes on within the games is so rewarding. I love that people are taking control of their journey and committing to these games to help them achieve their goals.

My Drizzle Me Skinny blog started 2 years ago. I was posting my creations on my Instagram account, and I had so many followers tell me I should have a blog, so I thought I might as well try it. Two years later, it has become my full-time focus. Creating new recipes on a weekly basis is truly my passion. To see so many people reaching out and show how much they love and appreciate my recipes is so humbling. I absolutely love what I do! 

Now that fall is here and the days are getting chilly, I thought I would share some fall comfort food dishes with you. We're all thinking of casseroles this time of year, but we want to keep things simple - most people today have very little time to spend in the kitchen. My recipes always get complimented on how easy they are. So here are three of my favorite fall comfort food recipes that are healthy, simple to make, and delicious:

Chicken Pot Pie Casserole

Chicken pot pie casserole is definitely comfort food at its best. The creamy chicken and veggies topped with golden baked biscuits will warm up any tummy on a cold fall day. Buffalo Chicken Pasta Bake

I love spicy food, and buffalo chicken is a favorite in my house. If you visit my blog you will notice I have several “buffalo” inspired dishes - I’ll attempt to turn anything into a buffalo recipe if I can! This buffalo chicken pasta bake is one of my most popular dishes on my blog. It’s filling and sure hits the spot for a fall classic meal. Taco Fiesta Bubble Up

Do you do Taco Tuesday in your house? Well this last dish is definitely well-suited for that and a great fall comfort casserole. My taco fiesta bubble up is my most pinned recipe, and the one I see posted by others on my instagram the most. I highly recommend trying it and promise it will become a new family favorite.
