Ham, Asparagus & Egg White Cups

These delicious, 4-ingredient treats are a great make-ahead breakfast. Just keep them in the fridge or freeze, and you'll have something on hand to grab when you're short on time in the morning!

Egg Whites (Separate if you’d like, but I took the help of a carton)

Thin ham slices

Asparagus, cooked and chopped

Salt and Pepper


Preheat the oven to 350°F and spray your muffin tin with nonstick cooking spray.

Place 1-2 slices of ham in each tin. I used very thinly-sliced ham, and the doubled-up slices held together a bit better.

Sprinkle a few asparagus pieces in each cup.

Fill the remainder of the cup with egg whites. Don’t be afraid to fill to near the top, as they won’t expand much.

Sprinkle with salt and pepper.

Place in the oven for about 15 minutes, or until the egg whites appear firm.

Enjoy right away, or refrigerate to grab-and-go later!
